- Futura is a PET-NAT style wine made without the addition of sugars or yeast for fermentation, only must. In October when Trebbiano Spoletino is harvested we freeze a small part of that must for 2/3 months. In January, after a correct rest we add this must. In the spring, when the temperatures rise the fermentation restarts naturally.
